Served with monkfish carpaccio, pea and foraged sea puslane, at the Spring sitting of Wild Wine Club - featuring 'Wines of the Loire', it was the star of the evening.

Domaine Fouassier Having gained a vast amount of knowledge from their fathers, current winemaking team, Benoit and Paul, have propelled the domaine towards organic and biodynamic viticulture. Domaine Fouassier gained organic certification in 2011 and biodynamic certification one year later.
Production note The grapes are harvested and gently pressed. The wine is made naturally using wild yeasts, while the cellar work is planned according to the biodynamic lunar calendar.

This wine is named after the place where it comes from called Sancerre (in the Loire Valley) and it is made from Sauvignon Blanc grapes. It is a dry, light-bodied wine which is very crisp and refreshing. It has flavours of zesty citrus fruit and gooseberry.
